Outlining the relationship between man and cattle, also from a historical point of view, which has continued for at least 12,000 years, the workshop looks at the juridical, physiological and etiological principles underlying the law governing these animals and the legal requirements for modern breeders. In the run up to the new Italian quality system for animal welfare (SQNBA) and the reform of labelling, we take a clinical approach to modern legislation. Animal welfare means producing more while polluting less, in the light of safety and the trust the consumer has in the Italian agri-food industry, in the breeder and in the controls run by veterinarians and the public authorities to safeguard the entire circuit. The Animal Welfare Observatory was established in Cremona, the capital of the Food Valley, as the first union dedicated to safeguarding the rights of working animals. It is directed by an agronomist, lawyer, historian and veterinarian. The stringent control of livestock production and food products starts in the shed and follows the animals through their transport as well as controlling their milk, with infinite controls to justify the certainty that Italian animal foods are the most controlled and safest in the world
